Pomegranate Butter Sauce

4 servings Ingredients:
1 tablespoon olive oil
1 tablespoon shallot, finely chopped
1 garlic clove, finely minced
3/4 cup pomegranate juice
2/3 cup chicken stock, low-sodium
6 tablespoons Plugrá® European-Style Butter, unsalted, cubed
Kosher salt
Black pepper, fresh ground
Directions:
1. In a medium saucepan over medium-high heat, heat oil.
2. Add shallot and cook for 2 minutes.
3. Add garlic and cook for 1 minute.
4. Add pomegranate juice and stock. Reduce by two-thirds or until mixture has thickened considerably.
5. Remove from heat and add Plugrá Butter one cube at a time.
6. Season with salt and pepper to taste.
