Pistachio Dusted Skate Wing

Ingredients: 

Pistachio Dust
2 cups pistachio, shelled, lightly toasted
1 teaspoon Kosher salt
1/2 teaspoon black pepper
1/2 to 1 cup all purpose flour

Skate
4 fillets skate wing, 4 to 5 ounce, boned
4 tablespoons Plugrá® European-Style Butter, unsalted

Directions: 

Pistachio Dust
1. Toast the pistachios on a sheet pan in a 400 degree oven for 5-7 minutes, do not brown the nuts.
2. In a food processor or spice grinder add the pistachios, salt, pepper and pulse.
3. Add in slowly the flour and continue to pulse until smooth and the mixture is fairly dry, adding more flour as needed.
4. When it has reached a fine consistency, reserve.

Skate
1. Take the skate fillets and lightly and evenly dust each fillet(both sides) with the pistachio dust. It is not a thick coat but a light dusting.
2. In a medium to high heat saute pan in (2) separate batches, put 2 Tablespoons of the Plugrá Butter and sauté 2 of the skate wings until lightly browned on each side. About 1-1/2 minutes per side.
