Orange-Tarragon Butter for Seafood

8-12 servings Ingredients:
1/2 pound Plugrá® European-Style Butter, unsalted, softened
Zest and juice of 1 orange
2 tablespoons orange juice concentrate
1/2 cup tarragon leaves
Salt and black pepper to taste
Directions:
1. Process Plugrá® Butter with orange zest, fresh orange juice and frozen orange juice concentrate until smooth and creamy.
2. Add the tarragon, salt and black pepper and process briefly until creamy with bright flecks of green.
3. Serve as a topping for sautéed or grilled softshell crabs, steamed lobster, or grilled fish.
4. Refrigerate or freeze remaining flavored butter.
Chef's Note
The orange-tarragon butter also is great served with steamed green vegetables.
