Mexican Fiesta Butter

20-24 servings Ingredients:
1 pound Plugrá® European-Style Butter, salted, softened
2/3 cup cilantro, fresh
1/3 cup chipotle peppers in adobo sauce, drained, seeded
2 garlic cloves
2 tablespoons lime juice, fresh
2 teaspoons black pepper, freshly ground
Salt to taste
Directions:
1.Whip Plugrá Butter until smooth.
2. Chop cilantro and chipotle peppers and mince garlic.
3. Combine Plugrá Butter, lime juice, garlic, pepper, cilantro, chipotle peppers, and salt with a rubber spatula.
4. Roll into two 1" x 6" logs using parchment paper. Chill for a few hours before use.
5. Transfer to plastic wrap. Can be stored in refrigerator for 3 weeks or in the freezer for up to 3 months.
