Lime Pickled Red Onion

Ingredients: 

1 quart lime juice, fresh
2 tablespoons coriander, freshly toasted
Salt and pepper to taste
1/4 cup honey
2 tablespoons mustard oil
1 red onion, sliced thinly

Directions: 

1. Combine all ingredients except onion; mix together.
2. Add the onion and submerge. Cover and refrigerate for 2 days.
3. With a fork, pull the onion from the pickling liquid; set aside to complete the dish.
