Grilled Tarragon Vegetable Parcels

Ingredients: 

1 cup sliced carrots, blanched
1 cup broccoli, blanched
1 cup cauliflower florets, blanched
1 cup sliced zucchini
1/2 cup thinly sliced red onion
1/2 cup Plugrá® European-Style Butter, unsalted
1/2 cup tarragon leaves, fresh
1/4 teaspoon lemon zest
Cracked black pepper

Directions: 

1. Divide vegetables evenly among 6 squares of foil, 12-inch.
2. In processor, blend butter, tarragon, lemon zest and pepper.
3. Top each vegetable portion with 1 heaping tablespoon tarragon butter mixture. Seal foil.
4. Place on grill until hot, about 10 minutes.
