6 servings Ingredients:
1/2 cup Plugrá® European-Style Butter, unsalted
2 pounds carrots, chopped
3/4 cup onion, chopped
4 cups chicken broth
3 cups heavy cream
2 tablespoons orange juice concentrate
1 teaspoon ginger, freshly grated
1 teaspoon tarragon leaves
Salt and pepper to taste
Directions:
1. In saucepan, melt Plugrá Butter; stir in carrots and onion. Cook until tender.
2. Add remaining ingredients. Simmer 15 minutes.
3. In blender or food processor, puree until smooth. Serve immediately.
