Ginger Soy Butter Sauce

Yield:
1 batch of sauce Ingredients:
1/2 cup soy sauce
1/3 cup honey
1 tablespoon brown sugar
1 ounce ginger, minced
1 tablespoon garlic, minced
1 tablespoon shallots, minced
1 pound Plugrá® European-Style Butter, unsalted, cold, cubed
Juice of one orange
Salt and pepper to taste
Directions:
1. In a saucepan, combine first six ingredients.
2. Bring the liquid to a boil and simmer for 5-6 minutes or until sauce is dark in color and reduced by half.
3. Remove from heat and whisk in the cold Plugrá Butter cubes, a few at a time. This will thicken the sauce.
4. Stir in the orange juice and strain through a chinoise.
5. Season with salt and pepper.
