Fig and Gorgonzola Cheese Butter

Ingredients: 

2 figs, large, chopped
2 tablespoons balsamic vinegar
1/2 pound Plugrá® European-Style Butter, unsalted, softened
1/2 cup Gorgonzola cheese, crumbled
2 tablespoons walnuts, toasted, chopped

Directions: 

1. In a small saucepan, combine figs and vinegar over medium-high heat. Stir until figs soften and liquid is almost evaporated, approximately 6 to 8 minutes. Set aside and allow to cool.
2. In a large mixing bowl, combine Plugrá Butter and cheese until smooth; fold in the walnuts by hand. Last, fold in the fig mixture so it is "swirled" in the butter mixture to give a marbled effect.
3. Remove butter from bowl and spoon onto parchment paper. Roll into a log, using edge of baking sheet to form a tight log. Chill for 2 hours before serving.
