Crispy Tilapia

Ingredients: 

1/4 cup flour
1/4 teaspoon salt
1/4 teaspoon pepper
2 eggs, beaten
1 cup Panko breadcrumbs
6 tilapia fillets, 4 to 5 ounces each, washed and patted dry
2 tablespoons Plugrá® European-Style Butter, unsalted
2 tablespoons olive oil

Directions: 

1. In a shallow dish, combine flour, salt and pepper.
2. In a second shallow dish, place the beaten eggs.
3. In a third shallow dish, place the Panko breadcrumbs.
4. Dredge a tilapia fillet first in the flour mixture, shake off any excess. Then dip the fillet into the egg; last, coat completely with Panko breadcrumbs.
5. Heat a mixture of Plugrá Butter and olive oil together in a large skillet over medium-high heat.
6. Pan-fry the fillets until crispy and golden, about 2 to 3 minutes per side.
7. Remove from heat and keep warm.
