1 medium onion, chopped
2 cloves garlic, chopped
1/4 cup Plugrá® European-Style Butter, unsalted
2 pounds carrots, sliced
3 cups chicken broth
2 tablespoons cornstarch
1 cup milk
1/8 teaspoon cracked pepper
1 cup plain yogurt
Directions:
1. Saute onion and garlic in Plugrá Butter until tender.
2. Add carrots and 1 cup of the chicken broth. Cover and cook 10 minutes until carrots are tender.
3. Transfer mixture to blender or food processor; process until smooth. Return to pan.
4. Dissolve cornstarch in remaining 2 cups broth; add to carrot mixture with milk and pepper.
5. Cook, stirring until soup just begins to boil and is slightly thickened. Whisk in yogurt. Serve immediately.
