10-12 servings Ingredients:
1/2 cup Plugrá® European-Style Butter, unsalted
1 eggplant, cubed
2 onions, diced
3 zucchini, cubed
1 pound potatoes, cubed
1 can plum tomatoes, diced
2 garlic cloves, minced
2 tablespoons parsley, chopped
2 tablespoons oregano, chopped fine
1 cup seasoned bread crumbs
Directions:
1. Preheat oven 350ºF.
2. Grease baking dish with Plugrá Butter.
3. In the baking dish, combine all ingredients, except the breadcrumbs, and mix together.
4. After all ingredients are mixed well, top with bread crumbs and dot with remaining Plugrá Butter.
5. Bake for approximately 1 hour or until potatoes are soft (fork tender).
