Braised Fennel

4 servings Ingredients:
1/4 cup fruity extra virgin olive oil
2 bulbs fennel, sliced vertically
1/4 cup white wine
1/4 cup orange juice
3 fresh bay leaves
2 sprigs thyme, washed
Salt and freshly ground pepper
Shopping List:
1. Preheat oven at 350°F.
2. Combine all ingredients in a bowl that will accommodate them and combine well with a spoon or even better, your hands.
3. Place in a roasting pan and cover with aluminum foil.
4. Roast in oven for 35 minutes or until tender, but not mushy.
5. Remove foil and cool fennel at room temperature.
6. Taste and season if necessary.
