4-6 serving(s) Ingredients:
2 pounds sea scallops
1/3 cup white wine
Juice of 2 fresh lemons
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon lemon thyme
1 1/2 cups cracker crumbs
1/2 cup Locatelli or Parmesan cheese
2/3 cup Plugrá® European-Style Butter, unsalted
Directions:
1. Preheat oven to 325°F.
2. Rinse scallops under cool water and drain well.
3. Place in 9" x 13" glass baking dish in a single layer.
4. Mix next five ingredients and pour over scallops.
5. Mix cracker crumbs and cheese and spread evenly to cover all scallops.
6. Pour melted Plugrá Butter evenly over crackers.
7. Cover with aluminum foil and bake in a preheated 325°F oven for 15-20 minutes. Remove foil and broil for 1-3 minutes until light brown.
